For the cake:

  • 2 cups all-purpose flour

  • 3/4 cup unsweetened cocoa powder

  • 2 large eggs, at room temperature

  • 1 cup whole milk

  • 1 cup heavy cream

  • 8 ounces semisweet chocolate, chopped

  • 2 tablespoons unsalted butter, at room temperature

For the chocolate frosting:

  • 1 cup unsalted butter, softened

  • 3 1/2 cups powdered sugar

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup whole milk

  • 1 teaspoon pure vanilla extract

  • Pinch of salt

Chocolate Fudge Cake


  1. Preheat your oven to 350°F (175°C)—grease and flour three 9-inch round cake pans.

  2. Sift the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.

  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes. Stir in the boiling water until the batter is well combined. The batter will be thin, but that's okay.
